What I Eat in a Day

Hi friends! Happy Tuesday! How is this fine September day treating you? I love the month of September (probably because it’s my birth month). This summer flew by so quickly. I am such a fall girl so I am not too disappointed. I’m ready for the cooler weather and comfy sweaters 🙂 I’m not basic, I’m just a girl who loves fall!

Today I am doing another ‘what I eat in a day” because my diet has changed a lot since I last did one. While we were in Aruba, I made the decision to eat less meat. That doesn’t mean I don’t eat meat at all but I try to limit it. The reason being that it has given me so much energy and it has helped my daily anxiety a lot! I don’t feel weighed down and I have a lot less really anxious days than I did before. I have also trying to up my protein intake since I’m not getting it from meat very often and I have started a new workout routine and I want to put on a little more muscle. Let’s get started!

Breakfast-8:00 am

Breakfast has to be one of my favorite meals of the day. It gets me going and it usually involves pancakes or oatmeal of some sort. Sometimes both! I love to make protein pancakes but this particular day I made blender pancakes. I love the blog “Erin Lives Whole” and she recently posted a recipe for blender pancakes and they are THE BOMB! I usually put a drizzle of maple syrup and some fruit on top! I don’t like my pancakes super sweet. I remember as a kid drenching my pancakes and waffles in maple syrup and now it just makes me cringe haha I also sometimes have some yogurt on the side (yogurt doesn’t upset my tummy, yay).

Lunch-11:00 am

I like to keep lunch light. I have been loving bringing a little taco bowl to work with me. I just mix together some quinoa or wild rice blend with some black beans, corn, salsa, taco seasoning and beefless crumbles from Gardein. These crumbles have so much protein in 1 serving (18g) and it fills me up so much! Quinoa is an excellent source of complete protein as well! I also like to peel some clementines to bring to work with me as well. I love fruit and I like to have it as a little dessert at most meals.

Afternoon Snack-3:30 pm

If you know me, you know I love my snacks. I love to snack on veggies and hummus or a pack of nuts when I get home from work! Today, though, I chose the Emerald 100 calories packs of nuts! My favorite is the almond and walnut mix. They’re so convenient and you can throw them in a bag if you’re on the go. They’re a great source of healthy fat and protein so it’ll tide me over until dinner. I used to snack on veggies and hummus a lot BUT my absolute favorite hummus from Lantana was recently recalled so I haven’t had that in a while *tears*. I haven’t been able to find a hummus besides that one that I really like. Sometimes I also have a little muffin that I baked. I love me some muffins!

Dinner-5:30 pm

This night we had spaghetti squash for dinner. I learned how to make spaghetti squash last fall and I love it for a super healthy dinner. Joey likes it too! I like to add in my beefless crumbles to make a little meat sauce and sprinkle it with some nutritional yeast. Sometimes I’ll make a loaf of artisan bread to go along with it but that usually has to start the day before.

After Dinner Snack-8:00 pm

Like I said before, I love my snacks but I also have a crazy sweet tooth. I can’t go to bed without having a little sweet treat while Joey and I watch a show or movie on the couch (ahem, Bachelor in Paradise). Sometimes it will be something that I baked that week but most nights I have a bowl of multigrain cheerios with a splash of unsweetened vanilla almond milk. I don’t know why but I don’t love tons of milk in my cereal like I used to. I just like enough to wet the cereal a little. It’s the perfect slightly sweet treat 🙂 I also like to have a cup of tea as well. I love this tea from Bigelow!

That’s a typical day of eats for me! I am not a health professional and I just eat what works for me. These are all just suggestions 🙂
